If you’re a sucker for all things Green Tea / Matcha flavoured, this one’s for you! Feel free to add red beans to the mixture if you wish for a truly Asian-inspired sweet treat!

A simple yet exquisite pound cake with the faint bitterness of green tea.

Ingredients
  • 1 1/2 cups plain flour
  • 1/2 cup white sugar
  • 2 tbsp Japanese Green Tea Powder
  • 1 tsp vanilla essence
  • 1/3 tsp salt
  • 1 1/2 tsp baking powder
  • 1 tsp psyllium husk, soaked for 5 mins in 1/4 cup water
  • 100ml Virgin Coconut Oil
  • 1/2 cup water
  • 1 tsp glycerin (optional)
  • 2 tsp cooked red beans (optional)
Directions
  • Step 1 Mix ingredients together in a bowl.
  • Step 2 Pour into a pound cake pan and bake in 180 degrees Celsius for 25 minutes or until the top crusting just begins to brown.
